BAKED COD from Split-Dalmatia, Croatia

BAKED COD

Preparation:
Keep the cod soaked in water 4days, and change the water daily. Cook the cod (bent, not broken). Clean the skins and impurities and take 1kg of pure meat. Cut the meat into pieces. Place the meat into a large bowl and add garlic, chopped salty anchovies, oil, cream, parmesan. Peel potatoes, cut them into thin sheets (as chips), and add on cod. Mix it very well with hands.
Put the milk and cream (12-20% mf) in a small bowl, and add salt and pepper. Let it boil and put aside. Code and potatoes place in baking pan, pour the mixture with prepared white sauce. The bowl has to be filled to the top. Bake it at 120C, approx. 3,5hours.

Chef’s notice:
Put enough salt in white sauce, because it is not impossible to salt potatoes later.

Ingredients for 4-6 people:
- 1kg of cod 8after soaking, 1cod of 800gr is enough);
- 0,5ml cream (12-20% mf);
- 02.5l of milk (3.8% mf);
- 10dag salted anchovies;
- 2.5kg potatoes;
- 1.5cup of cream (22-30% mf);
- olive oil;
- garlic;
- 40gr of parmesan;
- 100gr of gorgonzola;
- salt;
- pepper.
All spices dose optionally.
