Dandelion Salad

Mix the cooked quinoa, cucumber cubes, diced avocado, lemon grass and small new dandelion shoots and drizzle with oil and lemon juice.

Whole cooked quinoa, cooked according to directions on the bag
Small cubes of a cucumber from Western Jutland
Cubes of avocado
Finely chopped lemon grass
Chopped new dandelion shot from the Western Jutland
Lemon Pepper oil or avocado oil
A little lemon juice
