Jørgen established his on-farm shop Hallegaard Gårdbutik in 1994 and has carved out a reputation as one of the best sausage-makers in Denmark. He received a diploma for culinary excellence from the Danish Academy of Gastronomy in 2004. Jørgen is constantly developing new products and prefers to use local ingredients. He also uses old Bornholm recipes for his products, and his best-seller is still a sausage named “Mrs Larsen”, based on the recipe of Rigmor Larsen, of the now-defunct Østerlars Hotel.
