Raised pancakes (Svele in Norwegian)
Whisk eggs and sugar fluffy. Mix the rest into the egg mixture. Leave to swell for 2-3 hours in a cold room or in the refigerator. Bake on a griddle or in a dry non-stick pan. Serve with jam and fromage frais.

300 g sugar
500 g flour
900g fromage frais
1 teaspoon baking soda
1 teaspoon baker's ammonia (ammonium carbonate)
100g melted butter or nut butter
