Blueberry pie

Pie crust :
Mix butter and sugar fluffy and add egg yolks. Sift in the dry and mix well. Press 2/3 of the dough into a greased round shape. Bake at 200 degrees for 10 minutes on the bottom shelf in the oven. Cool the pie crust. Turn oven down to 175 degrees. Press the rest of the dough around the edge of the mold.

Bluberry filling:
Boil blueberries, sugar, corn flour, lemon zest, cinnamon and nutmeg togheter. Stir well. Let it cool slightly before you pour the mass into the mold.

Mix together egg yolks, fromage frais, sugar, vanilla sugar and pour gently over the blueberry filling. Bake the pie at 175 degrees for about 45 minutes until golden on top. Let it cool before serving.
Pie crust:
175g soft butter
4 tablespoons sugar
2 egg yolks
4.5 dl flour
1 teaspoon baking powder

Blueberry filling:
1 l blueberries
1 1/2 cup sugar
4 tablespoons corn flour
1/2 teaspoon grated lemon peel
1/2 teaspoon cinnamon
1 pinch nutmeg

2 egg yolks
4 1/2 dl fromage frais
1 dl sugar
2 teaspoons vanilla sugar
