Fresh green Lunda Asparagus with smoked salmon
Break the asparagus where it breaks by itself natural, often about 1 cm nearest the root. Boil the asparagus for about 3 minutes in salted water, you can have one lump of sugar in the water .. Then wash the asparagus in icecold water so they cool. Drain them so they become dry.
Add asparagus in bundles of 3-4 and add or wrap around the salmon slices and arugula leaves. Put the bundles on a dish.
Mix together oil, lemon and chives, season with salt and pepper. Pour the dressing over the asparagus. Toast the sunflower seeds in a skillet. Sprinkle seeds and parmesan cheese over the asparagus.

8 slices smoked salmon
about 25 leaves arugula
2 tablespoons olive oil
2 teaspoons lemon
2 teaspoons chopped chives
salt and pepper
2-4 tablespoons lightly toasted sunflower seeds
about 1 tablespoon grated Parmesan cheese.
