Kartacze

Third place in the culinary competition "Master of Kartacze" during the Regional Festival of Borderland Kartaczewo 2014 in Gołdap.


Dough: grate potatoes, imprints through a linen cloth. Leave water for a while till at the bottom gathered some starch - which we add to the imprinted potatoes. Then we add ground to boiled potatoes. Season with salt and pepper and knead by hand into a homogeneous mass.
Filling: the minced meat, add chopped onion into small cubes, salt, pepper and marjoram. You can add a handful of cooked potatoes to the ground meat was not too hard. mix into a homogeneous mass.

Preparation: from the potato dough we formed dumplings a diameter of approx. 8 cm, put the ball on the cake of meat with a diameter of approx. 3 cm. BANDING meat potato ground, so that the resulting potato balls or elongated oval noodles. Thus prepared kartacze put into boiling salted water. We cooked about 30 minutes on low heat. After cooking pour gravy with pork fat and onions.
