Modern Burning Love
Burning Love is a much beloved danish classic featuring mashed potatoes, bacon and onion.. This is a modern twist with rootvegetables, which is just as delicious and addictive.
Peel root vegetables and potatoes and cut them into rough cubes.
Cook the root vegetables in water for 20-30 minutes until tender.
Drain and add vegetablestock while the root vegetables steam dry.
Blend root vegetables, broth and butter into mash and season with salt.
Cut the bacon into cubes and fry until crisp.
Cut onions into cubes and brown them in a little bacon fat.
Arrange the mash with onions and bacon on top.
1 kg mixed root vegetables (parsnips, parsley, white carrot, white beet, yellow beet)
2 potatoes (like Bintje)
1-2 cloves of garlic
1 vegetablestock cube
50 g butter
300 g drycured bacon or regular bacon
