The yeast cake with cheese

How to make a crumble topping: sift the flour, add the powdered sugar, egg yolk and butter . Knead the dough and put in a cool place (+ 6`C).

How to make the dough: into ½ cup of milk (slightly warmed) add crumbled yeast, 2 tablespoons sugar and 2 tablespoons flour. Mix everything together into a smooth mass and leave in a warm place to rise. Sift the flour, beat lightly eggs with sugar and combine with the flour. Then add the risen yeast, warm milk, sugar, a pinch of salt and melted butter. Knead the dough until it doesn’t stick to your hands. Sprinkle lightly with flour, cover with a cloth and put aside in a warm place to rise. Next divide the dough into two parts. One part roll out to a thickness of about 3mm and put on a greased metal plate. Poke holes in the dough with a fork and put the cheese filling.

How to make cheese filling : grind the cheese twice. Whip eggs with sugar and combine with cheese. Add the remaining ingredients and knead everything together. Apply the second part of rolled dough on the cheese layer, so that it covers it all. Poke holes with a fork in the cake to allow the air to flow while backing. At the end, break off small pieces of crumble topping and lay pieces next to each other. Put the cake in the preheated oven (preferably one with a tiled stove) and bake for about 40 minutes in temperature of 175`C . When the cake cools down, cut into fairly large pieces, pour with clarified butter and sprinkle with powdered sugar. Serve on plate decorated with a mint leaf.
