PUMPKIN CREAM SOUP
Peel the pumpkin, remove the seeds and cut into small pieces. Simmer in butter until tender. Dice the onion and fry. When all that cools down, blend or pass through a sieve. Add broth, if it is very essential dilute it with water so it doesn't dominate the taste of pumpkin. Season with garlic, salt, pepper and sour cream to taste. Serve with croutons.
