BREAD FROM CIRCASSIAN SPELT FLOUR

Mix the yeast with honey and a spoon of flour, add water and mix. Cover the dough with a cloth and leave in a warm place for about 30 minutes to rise. Meanwhile, sift the flour, so that a little bran is left to sprinkle the bread. Mix flour with salt, add the yeast mixture and the curd. Knead the dough and cover and leave in a warm place for 15 minutes, add some ground flaxseed. Divide the dough, knead it and place in baking tins smeared with oil or butter and sprinkle with bran. Leave for 10 minutes. Smooth the surface and smear with egg whisked with water using a brush,
Ingredients:
1 kg flour Circassian spelled flour with wholemeal
5 grams of yeast
0.1 liter of water
0.5 liter of sour milk (whey or buttermilk)
2 teaspoons of honey
1 level teaspoon of salt
linseed
oil or butter
