WILD BOAR STEW(for 15 people)

.The meat cut into small pieces/ cubes cm 2 /. Cut the onions and saute in lard, add the chopped carrot, celery, garlic, and parsley, and add meat. When liquid from the half evaporates add tomato,some broth and add all other ingredients. Meat must be covered with liquid, cook over low heat for about 1 to 1.30 hours .If necessary add some more soup. Serve with polenta or with gnocchi, bread dumplings or pasta .
If a boar is too old, the meat should be left overnight in wine,vinegar,rosemary and laurel leaf.
Ingredients:
3 kg boar meet (boneless)
50 grams of onions, onions
5 garlic cloves
25 grams of carrots
5 grams of celery root
1 bunch of parsley
2 tablespoons mustard
½ kg of tomato puree
20 grams of prunes
1 tablespoon sweet paprika
1 teaspoon ground hot red pepper
2-3 tablespoons of lard
1 hot pepper / chilli /
stock of cooked boar bones
½ liter of red wine
1žlica Vegeta / addition of dried vegetables /
salt and pepper
1 dl prošek(prosecco)
