Squids have to be cleaned first, the bottom half of the squid has to be washed and drained. Remove the eyes from the heads, mouth needs to be cleaned very well and then the squids are cooked. Only when they are totally soft, then you need to drain them and rinse in cold water.
Stuffing – boiled squid heads need to be choped, then add finely chopped ham, peas, a little bread crumbs, stewed onions, cuttlefish ink, just a bit of garlic, parsley, salt and pepper. Mix it all together and fill the bottom part of the squid with the sutffing. Close it using a toothpick. Grill them and serve with tomato salsa and palenta.
