PAŠTICADA TUNA/ TUNA STEW


Cooked potatoes must be dried!
Similar size potatoes cook in pot with cold water, until they are soft. Cooked potatoes crush together with bark to squeeze water. Peel the potatoes and knead the dough while potatoes are warm. On the counter put flour, approximately 120gr on 0.5kg of potatoes (weighed with bark). On flour put crushed potatoes, half of egg (very well whisked) and salt. Knead the dough quickly and not too long (so it will not become rubbery). Sometimes is necessary to add more flour, not more than 150gr on 0,5kg potatoes. If the dough is rubbery add teaspoon of cornstarch. To get nice shapes of gnocchi, roll dough tightly and cut into pieces of 2cm and press every piece on fork. Leave them 20-30minutes to dry the surface of gnocchi, so they can keep shape during cooking. Cook them in large pot, without mixing and they are done when they float on surface.

Tuna stew
In pot put olive oil, fry tuna steaks on both sides, remove then and put chopped onion on the rest of oil. When onion is done put all dry ingredient and cook till get mixture similar consistency as marmalade. Add red wine, tomato sauce and put back tuna steak and cook till it is done.
Serve with warm gnocchi.
Ingredients:

• tuna steak 300gr
• parsley 20gr
• olive oil 0,5dl
• purple onion 300gr
• garlic 20gr
• red wine 3dcl
• bay leaf
• clove
• salt
• pepper
• spoon of tomato paste
• few prunes
