YELPAZE KEBAB ( YELPAZE MEANS FLABELLATE IN TURKISH. DUE TO ITS SHAPE, THIS KEBAB CALLS AS YELPAZE KEBAB)

We divide eggplants into thin long strips without peeling them. Soak eggplants in salty water for 10 minutes.
Meanwhile, mix all the ingredients except tomatoes and green peppers for salpicon ingredients. Take away eggplants from salty water and drain them. Fill eggplant pieces salpicon and use sliced tomatoes and peppers for decoration. Place filled eggplants onto a buttered tray. On the other hand, mix dressing ingredients and add onto tray. Cover the tray's top with baking paper and cook for 20 minutes. After 20 minutes, remove the baking paper and cook for 10 minutes to have a roasted surface.

Salpicon Ingredients
1 clove of garlic
1 small onion grater
300 gr minced meat
Salt, pepper, chili peppers
Some parsley
1 tomato
2 green peppers

Dressing Ingredients
1 teaspoon tomato paste
1 teaspoon hot pepper paste
1 cup hot water
Salt
Baking paper
