GÜLÜKLÜ SOUP (WITH CHICKEN)

To prepare the leeches, mix the ingredients and make small chickpea-sized balls. Fry the leeches with butter and olive oil for about 10 minutes without letting it spread. Grate the pests and add to the leeches. Continue frying for another 5-6 minutes. Add the tomato paste and red pepper and fry for 10 minutes. Add the chicken broth and salt and allow to boil.
When boiling starts, add the boiled chickpeas. After 10 min add the lemon juice and rice. Then add the chicken meat and cook for about 10 minutes. When the rice is tender, turn off the stove and add dry mint to the soup.
Keep the lid of the pan open so that the rice does not mush.

Ingredients:
500 g skinned chicken meat (boiled and diced)
1200 ml chicken broth (6 cups)
180 gr rice (1 cup)
120 g boiled chickpeas (1 cup)
60 g tomato paste (4 tablespoons)
440 gr tomatoes (4 medium size)
120 butter (4 tablespoons)
12 g olive oil (2 tablespoons)
10 g red ground pepper (1 tablespoon)
5 g salt (1 teaspoon)
3 g dry mint (1 tablespoon)
200 gr lemon (2 pieces of medium size)

For Leech:
200 g ground meat (lean goat meat, double shots)
5 g black pepper (1 teaspoon)
5 g salt (1 teaspoon)
100 ml of lemon juice (preferably)
