FRIED CHAYOTA SERVED WITH TALATUR SAUCE
Slice the chayotas. Soak in water for 5-10 min. Then peel the shells. Cut the slices into thin slices and salt and fry.
Pound the walnuts until the oil comes out. Put into a bowl and add water. The amount of water depends on your preference as it will affect the consistency of the sauce. Pound the garlic too. Add the garlic and lemon juice to the walnut mixture. Add lemon juice to the talatura sauce just before serving to prevent the walnuts from tarnishing.
Mix the Talatur sauce with the fried chatoyas and serve.
Due to chayota is only harvested at winter times the meal can be served seasonally.
The meal is a traditional food of Alanya.

3 medium-sized lemons
3 teaspoons of salt
