BUMBAR DOLMA ( STUFFED LARGE BOWEL)

The transparent part of the cleaned intestines is turned from inside to out. Rub them with the sliced onion, lemon and salt for about 10 minutes. Rinse again with water and reverse the transparent part back again.

The mortar of dolma is prepared raw. Finely chopped liver, minced meat, finely chopped onions, grated tomatoes, rice, salt, pepper, 1 tbsp red pepper, tomato paste, olive oil, butter, finely chopped parsley and water are added to mixtured.

This mixture is filled into the intestine and placed in a pot spirally. Water is added until it covers whole surface of dolma and cooked. When Dolma is cooked, it is cut into the slices.

In another pot, melt the butter and fry the sliced dolma. Add the remaining water and red pepper in the previous pot onto fried dolma and let them to boil for a short time.
Squeeze lemon before serve.

2 large intestines
250 gr liver ( of goat)
250 g minced meat (from goat)
2 cups of rice
1.5 tea cups of olive oil
1 tablespoon butter
1 tablespoon tomato paste
1/2 bunch of parsley
2 medium onions
3 medium tomatoes
1.5 teaspoons of salt
1.5 teaspoon black pepper
1 tablespoon red pepper
Lemon (for service)
2 cups of water

To fry
2 tablespoons butter
2 tablespoons red pepper

To clean the intestines
3 lemons
3 onions
3 tablespoons of salt
