Stuart's Smokie Pie

Make your white sauce (packet can be used if you're feeling lazy)

Separate eggs and beat egg white to stiffen

Fold egg yolk into the flaked Smokie and add to the white sauce

Fold egg whites into the white sauce and add the cheese and butter

Pour the mixture into an oven proof dish and cook at 180 C for 20 minutes and until golden brown on top
(Serves 4)

1 pair of Arbroath Smokies (bones and flesh picked)
2 eggs
1/3 pint of white sauce
1oz butter
Grated cheese
