Preparation: In a baking dish put the veal cut into pieces. In a bowl put the chopped onions and carrots cut into rings and all together salt and nice put together in a baking pan. In a separate bowl put sliced potatoes, season with salt, oil it and add a little red pepper. All together we put together and stir the meat in a pan. Add the oil and lard. Baking pan put on a warm fireplace (brick) , on a heartand , around which shed some liquor. Cover with the baking lid,pile cinders and hot ash on and around baking lid. When the potatoes become yellow (after 35 minutes), turn it and put the meat on top and bake for another 45 minutes.
